Italian Sausage and Red Sauce
Ingredients:
4 cans Italian style tomato paste plus 5 cans water (NOTE: add more water to desired consistency)
½ to ¾ cup red cooking wine
2 t dried basil
2 t dried oregano
1 t fennel seed
½ t red pepper flakes
1 onion, diced
2 cloves garlic, minced
1 lb bulk Italian sausage (Johnsonville Mild Italian sausage will work in a pinch)
1 4-oz can mushrooms, drained
Sea salt and black pepper, to taste
Directions:
Cook onions and garlic over medium heat under tender; add Italian sausage and cook until browned.
In a Dutch oven, combine tomato paste with red wine.
Add cans of water until desired consistency is reached.
Add spices, sausage mixture and mushrooms.
Bring to a bubble over medium heat; cover and simmer for at least 2 hours.
