Yield:  8 Servings



  1. Preheat broiler to high. 

  2. Place bread slices on your broiler pan.  Toast bread on each side under hot broiler until slightly browned and crisp --  keep an eye on it!!

  3. Rub toasts on serving side with cracked garlic and drizzle with oil. 

  4. Chop seeded tomatoes and place in a small bowl.  Pile basil leaves on top of one another and roll into a log.  Thinly slice basil into a green confetti and loosely combine with tomatoes.

  5. Add Kalamatra olives 

  6. Add a drizzle of olive oil and a little coarse salt to the bowl and gently toss mixture to coat.  Place bowl on a serving platter with a serving spoon and arrange toasts around the platter.

  7. Top with freshly grated Parmesan.
